Notes: Paiagallo is an important MGA, which has an overall surface of 12,35 ha, located in the Eastern Slopes of the township of Barolo. Alessandro Veglio brings 0,65 hectare of Paiagallo Menzione Geografica Aggiuntiva to the winery. Mauro Veglio Barolo Paiagallo will be available from 2016 vintage.
The maceration is on the skins in stainless steel tanks at a controlled temperature for 20-25 days, starting with cold maceration(10°C) during the first 48 hours. This period sees a very delicate extraction, with only a couple of pumping done every day. Racking then follows and the malolactic fermentation takes place in stainless steel tanks. Afterwards, around the month of December, the wine is stored in an oak barrel, with a capacity of 30hl, where it will age for a total of 24 months. After decanting in stainless steel tanks, the wine can be bottled with out undergoing processes of filtration or clarification.
