THE PLACE: Located at an altitude of 1400 meters and just 600 meters away
from the mountain range, San Pablo is characterized by a cold
and extreme climate. Its landscape is abundant in trees and
streams, creating a true oasis at the foothills. Its alluvial soils
originated from the Las Tunas River and have a layer of
medium-sized stones covered with calcium carbonate starting at
80 cm deep.
HARVEST: The 2022 vintage was fresh and well-balanced. The particular
combination of high insolation with low temperatures allowed
the vine to ripen steadily and keep its natural acidity intact.
These conditions gave rise to elegant, fine and complex wines,
with a great balance between juiciness and freshness.
VINIFICATION: Selection of bunches. Filling of the concrete vessels by gravity.
Fermentation with native yeasts in concrete vessels.
75% of the wine is aged in concrete while the remaining 25% is
aged for 10 months in used, untoasted 500-litre French oak
barrels. No malolactic fermentation.
